Ingredients:

• 1 can of ginger beer – $1.35
• 4 apples/diced – $0
• 100g dates – $0
• ½ pack Scotch Fingers – $1.85
• 2 tbsp butter – $0

Equipment:

• 4 rice cups
• 2 large containers

Tip:

Place Scotch Fingers into a large container and use a peanut butter jar (lid part) to crush the biscuits.

Add plum jam for a richer flavour.

Method:

1. Peel and core four apples/dice.
2. In a large container put diced apples and the ginger beer into a microwave for 15–20 minutes, stirring occasionally.
3. Add dates and cook for another 5 minutes.
4. In another container, place half a pack of Scotch Fingers in and crush them.
5. Add butter, microwave it for 10 seconds and then mix and combine.
6. Place mix onto a hot flat Breville and cook till golden brown. Remove and cool down.
7. Spread apple and dates, mix evenly into the four rice cups and evenly spread the biscuit crumbs on top.
